Huli-huli chicken wings and pineapple

This recipe can be done with any cut of chicken. It's sweet, spicy and refreshing.

To make the chicken and the grilled pineapple:
Ingredients
  • 1 small ripe pineapple (use fresh fruit, not canned)
  • 1 piece of ginger (3-4 cm)
  • 3-4 garlic cloves
  • 100 ml soy sauce
  • 700 gr chicken wings
  • 1 tb honey
  • 2-3 tb vegetable oil
  • 3 tb ketchup

Method

  1. Place the pineapple on its side, on a chopping board and cut off the pokey crown and the bottom.
  2. Trim the skin, then cut into slices and remove the core. You should have several slices with holes in the middle. Save 3 slice for grilling.
  3. Chop the rest of the pineapple, then add it to a food processor along with the ginger and garlic. Mix with the wet ingredients and the sugar, then pour on top fo the chicken wings and the 3 slices of pineapple and marinate for 2 hours.
  4. Bring your oven at 200 C and place the wings and the pineapple on a single layer in a large tray. Bake them for 20-25 minutes, by brushing them with the marinade every 10 minutes. Increase the temperature to 240 C and broil them for another 5 minutes.
  5. Serve with rice and a greens salad.
