Fig pie with sharp cheddar

A pie with cheese and figs that goes very well with a drizzle of honey on top

To make the crust
Ingredients
  • 200 gr flour
  • 1 egg
  • 100 gr butter
  • 1/2 teaspoon salt

Method

  1. Use cold butter, from the fridge. Add the flour, salt and butter in a food processor and pulse until all the butter is incorporated and it has a sand texture.
  2. Add the egg, mix it well then form a dough. Try to not use your hands very much, so the butter doesn't melt.
  3. Wrap the dough in cling film and let it rest in the fridge for 30 min.
To make the filling:
Ingredients
  • 2 tb mascarpone cheese
  • 70 gr sharp cheddar
  • 4-5 fresh figs
  • 1 egg
  • 1 ts flour
  • pinch of salt

Method

  1. Grate the cheddar, then mix it with the egg and mascarpone.
  2. Add the flour and the salt.
  3. Take out the pie dough from the fridge, then roll it into a thin sheet. Grease a tin with butter, then gently press the dough on the tin. You can go a bit higher on the edges.
  4. Add the filling and slices of figs on top and bake for 35 minutes at 170 C.
  5. Drizzle some honey on top before serving.
