Pulled pork tacos
Corn tortillas filled with crispy pulled pork, traditional frijoles refritos and fresh vegetables and herbs.
To make the pulled pork
Ingredients
- 400 gr pork shoulder
- 1 onion
- 1/2 ts salt
- 1 jalapeno
- 5 garlic cloves
- juice from 1 orange
- 1 ts cumin
- vegetable oil for crisping the pork
Method
- Rinse the pork and rub it well with salt, cumin and pepper.
- In a large tray add the pork, the onion, the jalapeno and the crushed garlic cloves, squeeze the orange, add water to cover the meat and cover with kitchen foil.
- Place it in the oven and cook for 4-5 hours at 120 C. After this time, the pork should be falling apart. Remove the foil and cook until the liquid evaporates.
- Discard the onion and shred the meat by using two forks. Heat 2 tb of oil and fry the pork until gets crispy.
To make the refried beans
Ingredients
- 1 can of cooked black beans
- 1 clove garlic
- 1 tb butter
- 1/2 ts ground cumin
- 1/4 ts salt
- 100ml water
- 1 tb lemon juice
Method
- To make the refried beans, heat butter and add the minced garlic. Fry until you start smelling the garlic, about 1 min.
- Add the black beans, water, salt, cumin, and lemon juice. Use a potato masher or the back of a fork to mash the beans.
To assemble the tacos

- Grill each tortilla on both sides.
- On each tortilla add some refried beans, pulled pork, and top with chopped green onion, avocado, roasted pepper, tomato, coriander and dour cream.
