Spinach pesto pasta with salmon and scallops
Pasta with seafood and freshly made spinach pesto.
To make the spinach pesto:
Ingredients
- ~70 gr fresh spinach
- a handful of basil leaves
- 50 gr grated parmesan
- 50 gr toasted pine nuts
- 3-4 garlic cloves
- zest from 1/2 lemon
- 100 ml olive oil
- salt and pepper
Method
- Add all the ingredients to a food processor and pulse to get a thick paste.
To make the pasta and fish & scallops
Ingredients
- 250 gr spaghetti
- 150 gr salmon
- 150 gr scallops
- 3-4 tb olive oil
- 1 tb butter
- 150 ml white wine
- a few basil or parsley leaves
- 1 bacon rasher
- chilli oil
Method
- Cook the spaghetti as per the package instructions. In the meantime, cut the salmon in bite-size pieces. Pat dry the fish and the scallops with a kitchen towel. Season with salt.
- Heat the oil, add the bacon and cook until crispy. Remove the bacon and break it into small pieces.
- Add the salmon and the scallops to the pan and fry on each side for 2 minutes. Then add the butter and the white wine and cook on low heat for another 3-4 minutes.
- Strain the liquid left in the pan and mix a few tb with the spinach pesto.
- Add pesto to the plates, spaghetti, the fish and the scallops and top with crispy bacon, fresh basil or parsley leaves and chilli oil.
